Chitlins are a big nope. My grandmother made me eat them when I was a child. I did not like them then, and do not like them now. BBQ slaw is great!

Collards are one of my favorite Southern dishes. I prefer them boiled, then fried in fat back grease, with crushed red pepper. Served with pepper vinegar.
